How we process it, step by step
- Raw material intake
Fresh onion, garlic, carrot and spinach arrive from contracted growers, are weighed and sampled, and the pesticide panel is released before production starts.
- Washing and peeling
Three-stage washing removes soil and debris; onions and garlic are peeled mechanically and finished by hand to remove damaged cloves.
- Slicing and flaking
Product is cut on rotary or belt slicers to the agreed thickness - 3-5 mm slices for onion, 8-10 mm flakes for garlic - then spread evenly on drying trays.
- Hot air drying
Multi-stage tunnel dryers run 55-70 C for 8-14 hours, ramping temperature down as moisture falls so the surface does not case-harden.
- Tempering and milling
Dried product tempers to equalise moisture between pieces, then is milled to granules or powder on request.
- Metal detection and packing
Every lot passes metal detection and X-ray before packing into PE-lined cartons with a batch COA.
Grades, cut sizes and best-fit uses
| Grade | Specification | Typical use |
|---|---|---|
| Onion flakes | 8-15 mm, moisture 6% max | Soups, sauces, ready meals, burger seasoning |
| Onion granules | 40-80 mesh, 3-5 mm | Seasoning blends, sausage, snack coating |
| Onion powder | 80-100 mesh | Bouillon, marinades, snack seasoning |
| Garlic granules | 8-16 mesh | Sauce, seasoning, meat processing |
| Carrot / spinach flakes | 5-10 mm | Soup, instant noodles, pasta fillings |
Cut size and colour are matched to your approved sample; tolerances are written into the specification sheet before production.
Quality control: the limits we work to
| Moisture | ≤ 8% (onion and garlic ≤ 6%) |
|---|---|
| Water activity (Aw) | ≤ 0.60 |
| Particle / cut size | Flakes 5-15 mm, granules 40-80 mesh |
| Total plate count | < 10,000 CFU/g (typical limit, batch COA confirms) |
| Coliforms | < 10 CFU/g |
| Yeast and mould | < 100 CFU/g |
|---|---|
| Salmonella | Negative in 25 g |
| Heavy metals | Pb < 0.5 mg/kg, Cd < 0.2 mg/kg |
| Foreign matter | None; X-ray and metal detection on every lot |
Values above are the standard specification for this range. The certificate of analysis issued with each lot states the measured result, and we will quote tighter limits where your own HACCP plan requires them.
Dehydrated or freeze dried: which to specify
Air drying is cost-efficient and gives the stronger, more concentrated aroma that seasoning houses rely on. Freeze drying keeps shape, colour and a lighter texture, which suits visible pieces in cup noodles or ready meals.
We run both technologies in the same facility, so the same vegetable can be quoted in either format without a second supplier, one specification and one shipment.
Custom mesh, blends and private label
Custom mesh size, pungency target, blend ratio, packaging and labelling are available, including private label bags and cartons with your artwork, barcode and lot coding.
Raw material is inspected on arrival, sorted with AI colour sorters and passed through metal detection before packing, with moisture, microbiology and residue limits tested per batch.
Packaging, MOQ and lead time
| Inner packing | Food-grade PE bag, nitrogen flush on request |
|---|---|
| Outer packing | 10 / 20 / 25 kg export carton with liner, or retail-ready pouch |
| Pallet | Euro or 1100 x 1100 mm pallet, shrink-wrapped, 1,000-1,200 kg per pallet |
| MOQ | 1,000 kg per SKU |
| Lead time | 15-20 days after confirmation |
| Loading port | Qingdao / Shanghai |
| Shelf life | 12-18 months |
What actually drives the price
- Raw material year: onion and garlic prices swing with the harvest, and off-season stock carries a storage premium.
- Mesh size: granules and powder require extra milling and sieving, so they cost more than flakes.
- Moisture target: 6% onion dries longer than 8% and is priced accordingly.
- Sterilisation: steam sterilised product for ready-to-eat applications carries a premium over standard food-grade.
Quotes are built line by line, so you can see which choice moves the number before you commit.
How it compares with the alternatives
| Attribute | Dehydrated (air dried) | Freeze dried | Spray dried powder |
|---|---|---|---|
| Cost per kilo | Lowest | Highest | Medium |
| Flavour strength | Concentrated, cooked notes | Fresh, delicate | Sweet, flat |
| Rehydration | 15-30 minutes | 2-4 minutes | Instant |
| Best for | Soups, sauces, seasoning | Snacks, premium blends | Beverage, instant soup base |
Five checks before you place a purchase order
- Ask for a flake sample from the exact production line that will run your order - not a generic sample from stock.
- Match the mesh size against your own process: too fine and it dusts, too coarse and it will not disperse evenly.
- Request the COA and allergen statement for the lot you will receive, and keep the retained sample in your own file.
- Confirm the packing format and pallet height before booking freight; carton dimensions decide your container utilisation.
- Agree the acceptance criteria in writing, including colour tolerance and defect limits, so an incoming inspection has a reference.
Frequently asked questions
What is the difference between flakes, minced and granules?
Flakes are the largest cut and are used where visible pieces are wanted; minced is a mid-size cut for sauces and fillings; granules and powders are specified by mesh size for seasoning blends and dry mixes.
Do you supply both dehydrated and freeze dried onion and garlic?
Yes. Both technologies run in the same facility, so you can source the same vegetable in either format with one specification and one shipment.
How do you control pungency in onion and garlic?
By fixing the raw material source, drying curve and cut size, then verifying each batch against the approved sample before release.
Can you consolidate several items in one container?
Yes. Mixed containers with palletised cartons are standard for distributors and seasoning houses ordering multiple items.
Is sulphite used in your dehydrated vegetables?
Our standard range is produced without sulphite fumigation. If a specific item requires treatment for your market, it is declared on the specification and the label.
Why is dehydrated onion cheaper than freeze dried onion?
Air drying removes water with heated air in a tunnel, which is far cheaper per kilo than freezing and sublimating under vacuum. The trade-off is colour and aroma: dehydrated onion is warmer and more cooked in flavour, freeze dried onion tastes closer to fresh.
Do you offer steam sterilised dehydrated vegetables?
Yes. Steam sterilisation is available for products going into ready-to-eat applications, with the microbiological result stated on the COA for each lot.
What is the typical shelf life of dehydrated vegetables?
12 to 18 months in unopened, PE-lined cartons kept below 25 C. Onion and garlic powder are more hygroscopic than flakes, so we recommend nitrogen flushing for long sea freight.
